I cannot tell you how much money I have saved and how many items I actually get for free. for example, I shopped today at Harris Teeter and spent $12, but SAVED $16.00! I got 5 bottles of Kraft BBQ sauce (buy 2, get 3 free), used coupons and got each bottle for $0.35!! I got 5 bags of shredded cheese for $4.36 TOTAL...the list goes on and on. Harris Teeter and Lowe's Foods DOUBLE coupons up to and including $0.99 EVERYDAY! Shop using the coupons combined with their weekly specials and you will be amazed at what you save! You can also visit a website called THE GROCERY GAME or COUPON MOM to get a layout of where to shop, what coupons to use and how much you will actually spend. You can also print your coupons from these sites. With this economy and being a stay at home mom, what a blessing! Every time I check out the check out people are amazed. Why not use coupons? They are FREE money!

She has always encouraged me, complimented me, and continues to do so. I am grateful for her and what I have learned from her. Torture?

So I am watching the news and the evaluation of the techniques used for suspected terrorists, which they are calling torture. The techniques included water boarding, (which is pouring a pitcher of water or running a hose over someone's face to simulate drowning), sleep deprivation for up to 11 days, face slapping with fingers, and being confined in a small room with an insect that is not capable of killing you. Now, I find it quite interesting that they are considering prosecuting the men that used these tactics (which were all legal) on suspected terrorists from 911. It is more than ironic for me to hear this news and how disheartened Obama is by the tactics used on the terrorists when he is NOT disheartened by placing infants in a room to die or by partial birth abortion, or any form of abortion for that matter. None of the tactics used on the suspected terrorists caused physical harm, death, or psychological damage, but abortion KILLS innocent babies. Food for thought.....

We had a wonderful Easter weekend! Egg Hunts, candy, bunny cake and we celebrated Jennifer's 32nd B-day. This year was a great time of pondering what Jesus Christ did for us 2000 years ago. It is so amazing to serve a HOLY GOD who holds the universe in His hands. What amazing love to send His only Son to die and be resurrected so that we may have life in Him. Olympics

YEAH for the Olympics, our favorite thing to watch on TV!! Mark and I's favorites so far are of course Shawn Johnson (gymnast, pictured) and Michael Phelps (swimming). We will be glued to the television every night cheering the USA on. It has also been fun watching the Chinese women compete in gymnastics, and they prove to be quite the threat to the USA girls. I look forward to seeing what will happen in the finals.

I love everything about watching the Olympics. I get nervous for the people, cheer for them, cry when they win, cry when they lose, the works. So the past two days I have been watching the trials (Thank God for the rabbit ears given to us by our neighbors). Of course my two FAVORITE events are gymnastics and swimming since these are the sports I competed in growing up. The girls final gymnastic trial comes on tonight. I like all the girls, but my favorite so far is little Shawn Johnson. She is a little 4 foot 9, 16 year old POWERHOUSE and is one of the cutest girls I have ever seen. She looks like she could, (and I am sure she can), beat up anyone that crosses her, but she talks with this little mouse voice that is too cute. Her gymnastic ability in UNBELIEVABLE and I cannot wait to keep an eye on this one! I will get back to you on my favorites for swimming, I am watching diving today. I LOVE THE OLYMPICS! YEAH!!

Time Shares....Hmmmm

For Father's Day last weekend, Mark and I went to Myrtle Beach. Why Myrtle Beach? Well, for years Mark and I have been all about doing Time Share presentations in different areas to receive the free gifts. This particular vacation cost us $39.00 for a 2 night stay at the Hilton Resort in Myrtle. The room rate is typically $175-$200.00 a night. Also, since we went during a weekday, after hearing our 90 minute presentation they gave us a $50.00 Visa Card AND a FREE 3 night getaway! Good deal huh? The weather was beautiful and we stayed right on the ocean in an ocean view room. The Hilton has great ammenities (sp?), but I must say that the rooms are very similar to the Microtels...very small. None the less, the weekend was enjoyable (other than going to bed at 8pm since that is Josiah's bedtime and lights were out), AND they actually put us in the wrong HOTEL so they refunded our $39.00 fee AND gave us an extra $25.00 on our Visa gift card! Basically they PAID US to vacation! The company we did this through is Bluegreen travel if anyone is interested in going.

Remember my blog about Mark and his new hobby, coffee roasting? Well, this weekend he decided to try to teach me to roast the beans. I like the idea, but do not sit still enough to turn this roaster for 15 minutes. Memorial Day

Mark and I spent our Memorial Day weekend in Wilmington just relaxing and spending time with family. Our sister in law, Amy, is an artist and she was a part of an Art Festival in downtown Wilmington, so we got some great shots of the area. Downtown Wilmington is a huge, historic tourist spot and the scenery is beautiful. It is on the riverfront and there are several historic churches and buildings in the area. We also visited the beach (of course) and spotted the 10 foot alligator (in the picture below), sunbathing at Greenfield Lake. That was quite exciting! Anyways, enjoy the pics!

Horrible Tragedy

Steven Curtis Chapman is by far my most FAVORITE songwriter and singer of all times. His music is unbelievably powerful to me and just so genuine. Yesterday, tragedy struck his home. His youngest daughter Maria Sue Chapman, who was a 5 year old adopted from China was hit by an SUV in their driveway and killed. I cannot imagine the pain they are going through. As a mom, I truly cannot even begin to imagine going through this. I praise the LORD that they trust HIM and that HE (GOD) PROMISES to give us "peace that surpasses all understanding" even in situations like this. Maria is the youngest child in the Chapman family and was one of 3 that they have adopted from China. Maria had just turned 5 a few days ago, now she is home with Jesus. PLEASE pray for their family during this time.....

David Vs. David AMERICAN IDOL

I have been hooked on American Idol this season and tonight was the final competition between David Archuletta and David Cook. Everyone assumed it would come down to these 2 men in the end and it was awesome performances from both. It is so hard to know who to vote for because they are both so talented. I think they both were equally GREAT tonight, so I voted for each!! I cannot wait until the result show tomorrow night!

Myanmar and China

WOW, what tragic events in the last few days. Myanmar with the cyclone killing over 30,000 (at least), and China with the massive earthquake, killing at least 18,000. Before I had ever traveled overseas it was so hard for me to relate when tragedy struck other nations. After living in Japan for almost 2 years and traveling to several other countries around the world, I feel like I can better relate to the suffering of the people of all nations. The anguish and pain that we feel in America when we experience things such as 9/11 is the same anguish, fear, pain, and loss that all people of all nations feel when tragedy strikes. Thank God for the missionaries and for the people that have carried the message of Christ to such nations. Without Christ there is no HOPE in death, there is no HOPE when you lose a loved one, there is no PEACE to calm the fears. PLEASE..PLEASE pray for the people in these countries as they deal with such devastation and PLEASE if you feel God calling you to go and help, answer His call! Pray that through these events that God will be glorified among the nations and SALVATION will come to those that are lost.

This year I have planted my first tomato plant, and squash and zucchini. I hope to save some money by growing the produce ourselves. SO...here are the first pictures and we will see how the progression goes. New Job

I love running my own business, but lately I have been doing a lot of shows and got a little burned out. Being the only owner, it makes for a whole lot of work and time. Last weekend I was sick and participated in the Southern Women's Show here in Raleigh. It was a great show, but I worked 40 hours in about 3 days, so I was worn out! I will continue to do Unique World Trends, but starting Monday I am going to start coaching gymnastics for 3-5 year olds. YEAH! This will be my stress free, active, do not have to dress up job. I used to coach the same age group and teenagers when we lived in Wilmington at Gymnastics Unlimited and I really enjoyed it. Josiah will be able to take the "mom and tot" class for free, and I was a gymnastic NUT growing up, so that is extra exciting for me. I am already teaching him forward rolls which he LOVES. I tell him to tuck his head and he bends over, puts his head on the ground and gets ready to flip. TOO CUTE. So, if you are in the Raleigh area and have children, come visit Gym Carolina.

Last night our friends Matthew and Elizabeth came over for our regular Wednesday night get together. Elizabeth has quickly picked up on my obsession with wildlife, especially SHARKS..She gave my one of, if not my most favorite birthday gifts EVER! It was the complete 20th Anniversary SHARK WEEK DVD set! I am so excited because my favorite TV week of the year is Shark Week. My husband picks on me because sharks are so exciting to me and yet they are the biggest fear that I have in life. Truly, no joking. I am from Wilmington, NC so I grew up on the coast, LOVE the water, but am terrified of sharks. I have been blessed to have only seen a very small once while I was in the water. SO... I am not loving getting older. I still feel like I am 21, so it is a bit odd to me to actually be 31 years old. Thank you for all the birthday wishes! Mark and I spent the weekend in Myrtle Beach at South Beach Resort to celebrate and it was GREAT! My sister bought a time share there so we got to stay as her referral in a 2 bedroom condo at the resort. We watched movies, ate at Planet Hollywood and an ocean front restaurant called Damon's and relaxed by the pool. It was our first weekend away from our son who is 18 months (which is good for all married couples to do with children), but we were more than ready to see him again on Sunday. GREAT BIRTHDAY WEEKEND!

So, I am sitting here to watch the American Idol results show and I have the chills! They just opened the show the same way they closed it out last night. That is right, the contestants sang "Shout to the Lord"and they included JESUS in the lyrics this time! WOW!!! It reminds me that one day EVERY tongue will confess and every knee will bow to JESUS CHRIST! Whether the contestants singing it are believers or not, they just confessed who Jesus is..AMEN once again..

Idol Gives Back...Shout to the Lord

I do not know if you had the chance to watch it last night, but Idol Gives Back was a great show! The show is used to raise money to help AIDS victims, especially orphans in Africa whose parent have died from the disease. The money is also raised to help those in poverty in the USA. There were guest appearances by SEVERAL celebrities who shared their stories about traveling to Africa and places in America to experience firsthand the horrific situations of poverty and need for medical attention. Among the celebrities were Brad Pitt, Carrie Underwood, Robin Williams, and many more. The biggest shocker for me was when Ryan Seacrest announced at the very end that the Idol contestants would be singing "Shout to the Lord" which is one of my favorite praise songs about who Jesus Christ is. Even though they edited out the name of "Jesus" in the beginning of the song, it was powerful just the same. I love how God uses even American Idol to get the praise that He deserves! AMEN!! On that note, it was just 2 weeks ago that Dolly Parton was on the show and sang "Jesus and Gravity" also giving a great testimony to who Jesus Christ is. Yesterday I spoke with one my dear friends whom I grew up with. Over the past several years her mother has been battling ovarian cancer. Mark and I were also quite close to her mother and used to clean her home when we owned a cleaning business in Wilmington, NC. Emily ( my friend) shared with me yesterday that her mother went on to be with her Lord and Saviour Jesus Christ on Monday. It was such a testimony of God's love to hear the peace in Emily's voice while dealing with such a hard thing. Such peace comes from knowing that her Mother had accepted the forgiveness that God offers us through the sacrifice of Jesus Christ. We can rest knowing that Janine is in heaven with God where she has no more cancer, no pain, and a brand new body. Starting a Business

About a year ago I embarked on a new mission of starting a retail business named Unique World Trends. I had no idea the work and time that goes into such an ordeal. While my husband and I were living in Japan as missionaries, we had the wonderful opportunity to travel to Thailand. If you have ever been to Thailand you know the beauty of the people, the land and the merchandise. I bought a few purses while there and have received compliments on them daily since back in the USA. After some urging on by my mother, I decided to start importing them to sell. One thing has led to another and now I have a full fledged Internet retail shop selling handmade BAMBOO, SILK, COTTON, and WATER HYACINTH bags. Of course along the way I have added some famous Thai silk scarves and some other trendy things to my shop, but I focus primarily on the Thai products. I like the Thai products because they have unique look and are very high quality merchandise. I have had the opportunity to be a part of several TRADE SHOWS and am still very much learning the ropes of running a business. I would love it if anyone had some helpful advise to pass along...I will keep you posted. I will be hosting a table this weekend in Wilmington, NC at the annual Coastal Living Show.

I love this time of the year when everything is coming back to life and the weather is warming up. I have spent the last 3 days with my door open all day playing outside with my son. I also love this time of the year because of Easter. Of all the things to come back to life, there is nothing that compares to Jesus Christ being raised back to life 3 days after His death on the cross. WOW...it is only because of this resurrection that I have been forgiven of all my sins and will spend an eternity in heaven when I perish from this life.Becoming a parent has really helped me to begin to understand the sacrifice God gave us when He sent His Son to die for us, so that we may live. What an amazing love. I hope that each of you reading this have accepted the love and gift of Jesus Christ dying on the cross and being raised again to life. Love you all....

What does a surfer do when he lives 2 hours from any beach? He learns a new hobby. Mark doesn't get to surf quite so much now that he is in school and we live in Raleigh. BUT, he has found a new hobby to fill his time. COFFEE ROASTING...somewhere along the 7 years that we have been married, Mark became quite the coffee fanatic. He got a coffee roaster for Christmas and now he roasts his own beans here at home. I love this hobby as well. WHY? Because it is actually MUCH cheaper to roast your own beans, then to buy them at the store. Mark loves it because he says the coffee taste 100% better then any bought from the store, or coffee shop (sorry Starbucks) I captured a bit of the process for you to check out.

Mark has been asking me for a while to make candy apples. Finally, this week we are both done with school until the end of January, so we actually have time to do other things then read and study. I found a candy apple kit at a local Lowe's Grocery store and was able to find Gala apples at SuperTarget for ONLY $.99/pound. Great deal huh? Tuesday night I made 12 Candy Apples, which my first time ever to make them, and I must brag and say they are awesome. It was lots of fun as well and they look very festive for the Christmas season. We shared the apples with our neighbors, and they were quite happy.

I LOVE baking for the holidays, so I started this week cooking all of our favorites. Some of those favorites include: peanut butter balls (chocolate covered), cranberry squares (YUMMY), fudge, sausage balls, and more! As of now, our house is stocked with a chocolate chip cheesecake, the first batch of fudge and cranberry squares. Along with recommending all of these tasty treats, may I also recommend my workout program which is HIP HOP ABS. Buy it cause it works and because you LOVE the name. Seriously, it is a very fun 30-40 minute workout and you truly see results in 2 weeks or less. Check it out! I am also giving you my EASY and DELICIOUS microwave fudge recipe. ENJOY!

1 box powdered sugar 1/2 cup cocoa 1/2 cup butter or margarine 14 cup half and half Put all ingredients in a microwave safe bowl and microwave for 1 minute on HIGH, stir and microwave AGAIN for 1 1/12 minutes. IMMEDIATELY ADD: 1 tsp vanilla, dash of salt, 3/4 cups chocolate chips. STIR UNTIL SMOOTH (add nuts of you like), and empty into an 8x8 pan. CHILL.

We spent this whole week in the mountains of Boone, NC. The weather was perfect the first few days and nice and cold the end of the week. We celebrated Thanksgiving with Jennifer's family and celebrated her grandfather's 80th birthday on Friday. We hiked Grandfather mountain, saw lots of animals, fed horses, sat in the hot tub and ate a TON of good food. Hope you all enjoyed your Thanksgiving Holiday as much as we have!! Enjoy the pics.... Apple Butter

Ok, so I have to brag on Mark for a bit. I am allowed to brag because he is my husband, right? Well, he LOVES apple butter and has been saying for a while he wants to make some from scratch. A couple of days ago, he went to the store, bought all the apples and other ingredients needed and got to work. The process to make homemade apple butter is a 24 hour ordeal. He cored all the apples himself, peeled them all, (which he says took about 40 minutes because you have to do it after they cook and are really soft), and followed the directions exactly. He made enough to fill 4 canning jars, which he canned himself as well, and it is DELICIOUS!!! Now I have to convince him to make more for Christmas gifts....

Celebrating 7 years of Marriage

This weekend Mark and I celebrated our 7th wedding anniversary on November 4th. Wow, how time does flies. It is true that each year gets better and better. We have traveled many places together all over the world, lived in another country, and are now proud parents of our first son. I am blessed to be married to my best friend who I can and do talk to about EVERYTHING, and most of the time, he listens! He is my biggest fan and I hope I am his. We spent the weekend back home in Wilmington, eating at our favorite places (Goody Goody, Trolley Stop, etc), and just sitting on the beach watching the waves and talking. Of course, Mark was able to surf some perfect waves both mornings, which was a bonus, and my mom took care of Josiah, giving us as much alone time as we wanted. This was one of the first years we did not travel somewhere for our anniversary, but being back in Wilmington made up for it for sure. There is nothing like sitting on the beach with a cool breeze and the warm sun on your face watching and listening to the ocean. We look forward to the many years to come that God gives us with each other.

I hear Facebook is the hot new thing. What are your opinions? I joined this weekend and it is nice to reconnect with old friends, roommates, etc., So far I like it much better than MySpace, which I am not a big fan of at all.

Sick

Josiah has his first real sickness! Yesterday, he was acting very tired and lethargic, so we knew something was wrong. He is usually full of energy, and like his mom and dad, he rarely sits still. He has had a cold the past few days, but has not acted sick at all until yesterday afternoon. We took his temperature and it was 102.3. This is the first time he has had a fever his entire life, so of course we took him to the doctor to find out he had an ear infection. Poor guy!! I have to brag though because he was not fussy at all yesterday, before the doctor, at the doctor, or after, even with his earache and the fever. He only acted more tired and subdued than normal. He is a trooper! He is on medicine now, slept great last night, got some extra cuddle time with Mom and Dad and is currently bouncing around in his crib as I write. He is so sweet!
